Garlic Honey Pork Roast

As I have mentioned, I love meals that I can start preparing early in the day and continue to work on throughout the day. This garlic honey pork roast recipe is a prime example of such a recipe. I am very please with how it turned out. In fact, I thought about making another one as soon as I was finished with the leftovers from this one. It was that good!

I am currently cooking for one…well I guess one and a half if I count Frog. A 3.5 lb roast gave me three nights of dinner plus two lunches.

First I started the roast in the crock pot, adding all of the liquids and spices. I cooked it for about 5 hours.

The meat was cooked at the end of 5 hours. I wasn’t pleased with the amount of liquid left in the crock pot. So I transferred it over to a Dutch oven (have I mentioned how much I love our Dutch oven?). I let the roast cook for another 2 hours. And that’s it!

In the spirit of creating a meal that would last me a few days, I cooked a cup of quinoa, 4 carrots (diced) and a head of broccoli so that I could make bowls. I topped the bowls with green onions.

  1. 1. Place pork roast in crock pot.
  2. 2. Add liquids: coconut aminos, water, honey, sriracha, hoison sauce, rice wine vinegar, sesame oil as well as spices: garlic and ginger.
  3. 3. Set the crock pot to cook for 4-6 hours.
  4. 4. Transfer roast and liquid to a Dutch oven and turn the stove burner on to medium high heat. Once the liquid starts to boil, reduce the heat so that it simmers. Let simmer for 1-2 hours until liquid is reduced.
